Escola de Sabores: Mango cream with beetroot, banana and chestnuts was the winning dessert

In the sixth episode of Escola de Sabores, quilombola, indigenous and riverine school cooks were challenged to create a dessert that combines vegetables and fruit, but without using sugar. The unanimous winning dessert was created by Alison, a school cook from the Indigenous Community of São Gabriel da Cachoeira (AM).

“You were a genius. You created a delicious dessert that is beautiful in colour, is healthy and makes you want to keep eating”, said guest judge, chef Helena Rizzo, after tasting Alison’s mango cream with beetroot, banana and chestnut.

The challenge eliminated Genilma, a cook from the Ribeirinha do Soure Community (PA). In addition to Alison, the following cooks remained in the reality show: Antônia, from the Ribeirinha do Jordão Community, who prepared a dessert with grated coconut, passion fruit, beetroot juice and oven-roasted banana; Tamires, from the Quilombola Community of São Lourenço do Sul (RS), who made a corn and raisin cake with banana purée and cheese; and Ana Paula, from the Quilombola Community of Minaçu (GO), who proposed a pumpkin and coconut porridge with banana and cinnamon.

“You brought your roots with a lot of creativity, boldness and courage, and now you can take a little of that experience to your school menus,” said the programme’s permanent judge, chef Bel Coelho.

Episode 7

In the next episode, the four participants will face off in the programme’s semi-final, which will air on 7 February at 12 noon on Band TV.

The reality show Escola de Sabores is a partnership between the National Fund for Education Development (FNDE), the Brazilian Cooperation Agency (ABC) and the WFP Centre of Excellence against Hunger in Brazil and is broadcast by TV Band on Saturdays at 12 noon.
