Escola de Sabores: Genilma Silva and Antônia Souza stood out among the riverside cooks

©Melissa Haidar

The third episode of the reality show Escola de Sabores brought a lot of excitement and unique flavours from Brazil’s riverside communities. The winners were Genilma Silva, from the Riverside Community of Soure (PA), and Antônia Souza, from the Riverside Community of the municipality of Jordão (AC), who delighted the judges with dishes full of tradition and creativity.

The reality show Escola de Sabores is the result of a partnership between the National Fund for Education Development (FNDE), the Brazilian Cooperation Agency (ABC) and the WFP Centre of Excellence against Hunger in Brazil and is broadcast by TV Band on Saturdays at 12 noon.

Winning dishes

This time, the challenge was to prepare a dish with typical fish and fruits from the riverbanks (pitanga, cupuaçu, cashew, jabuticaba and cajá), chosen at random in front of the judges.

Genilma presented a sautéed tambaqui fillet, accompanied by rice and cashew vinaigrette with lemon, with the support of nutritionist Carol Oliveira to harmonise the ingredients. Antônia won over the judges’ palates with a tambaqui in sauce, served with mashed cassava, salad and jabuticaba juice, with guidance from nutritionist Francisco Lima.

Episode 3 is available on the Centre of Excellence against Hunger YouTube channel: https://www.youtube.com/@wfpbrasil. The next challenge, in Episode 4, will feature elimination rounds for the team of indigenous cooks and will air on 10 January.
